Sanitation Inspection

Following is a typical sanitation inspection check we do every day.

Personnel:

Clean working uniform (including apron)

Personal appearance : Clean hair cut, clean shave or beard covers, closed clipped finger nails, head covering, neatness in dress, absence of cuts, sores, acne, or other indication of skin disorders or exposed parts of head, hands or arms.

Kitchen:

Cleanliness : Drains, sinks, and grease traps

Ranges and Grills : Clean and free from grease. (Ovens, unit covers, drip pan, range grease receptacles, hood and hood filters)

Can opener and base : Clean and free from accumulation of grime and food particles.

Deep fat fryers : Clean, coils clean, baskets clean and in good condition.

Steam jacket kettles : Clean (under cover and cover-exhaust opening), lids and spigots easily removable without tools for cleaning. Drains clean and free of food particles.

Ovens : Clean, free of burned food and food particles.

Sinks and gallery utensils: Clean and neatly stowed; steel and plastic sponges (but not steel wool), used for cleaning utensils, clean, free of food particles, air dryer, and neatly stowed.

Mixing machine and attachment, ice cream machine, meat and vegetable grinders and attachments and proof boxes, clean and in good operating condition.

Cutting Boards : Clean and dry, no evidence of cracks or pitted surfaces.

Bread and pie racks : Clean and in good condition. No evidence of smoking, laundering or stowage of personal gear.

All drawers in tables open and contents exposed.Extent, if any, of insect and rodent infestation.All gear clean and neatly stowed.

Vegetable Preparation Room:

Cleanliness : Decks, drains, traps, and sinks.
Potato peeling machine: Dismantled (cover and disk removed) wash water strainer clean and in good condition.
Slicing and dicing machines: Dismantled, clean and in good condition.Orderly stowage of food items on clean dunnage.Inspecting for insect and rodent infestation.

Dining Area:

Cleanliness : Decks, tables, benches, serving tables, coffee urns, milk urns, milk dispensers, warming ovens, water fountains, and ice machines, all gear clean and neatly stowed.Inspection for insect and rodent infestation.

Dish Room:

Cleanliness : Curtains clean and in good condition dishwashing machine dismantled, clean and free of odours, spray pipe clean, racks clean and in good condition. Thermometers operating properly and trash and garbage cans clean and tightly covered.

Garbage and Trash Cans:

Cleanliness : Clean, orderly, free from obnoxious odors, cans clean, in good repair, and tightly covered; inspection for insect and rodent infestation.
